How can I control the page layout of the Grocery_CRUD records list display and edit record fields display?

I want to output a standad Header and Footer onto the displayed page(s) but get odd display side-effects when I do this.

Can I change the font used, the size of the display controls or the width of the records grid?

Is there a procedure or documentation about how to do this or how to use css to otwerwise format the page(s)?

There are no documentation to do that. You could modify the css and view files located inside the "assets" directory.
However this is not recommend because if you want update to newer version in the future this task become a real headache. I recommend you to do a copy from one theme and implement the modifications.
