Is there a way to add Extending Forms in GC ? or some info to put me on the right path ?

What do you mean by add Extending Forms ??? What is your intention as such?

Well something like http://www.quirksmode.org/dom/domform.html i was thinking something like hiding the div's and then use a js script to make them visible or something ...

Well there is no inbuilt functionality and tis is truely a feature to be developed using javascript. The same javascript can surely be applied / added in a grocerycrud form tooo.. but @the end of the day, it all depends on how you manage to handle the additional / extended fields.
